Putien @ Sunway Pyramid

The PUTIEN brand name has its roots traced to Putian, a beautiful coastal town located in the Fujian province of China. Surrounded by spectacular ocean views and majestic mountains, Putian is blessed with lush pastures and bountiful catches from the sea. Even as the locals have sampled the eight main Chinese cuisine types, nothing delights them more than uncomplicated and homely Putian fare – that which exudes rich flavours of back country and brings to mind corresponding attributes of simplicity and purity – inherent in local customs and culture. The atmosphere of warmth, sincerity and hospitality at PUTIEN underpins an indispensable part of the Putian culture.

The outside makes no grand statements despite resplendent in gleaming golden-bronzed title - Putien , and the same goes to their menu and the dishes they are offering.

Seaweed with Mini Shrimps

虾苗拌紫菜  RM8.90

The seaweed is categorised by its level of quality and harvest timing. The first harvest, literally translated as “seaweed of the first water” is thought to have the highest nutritional value. Available only in limited quantities, this batch makes up the most premium grade of seaweed. Tossed with mini shrimps, it is a refreshing starter to begin with.

Note how often you can count the ingredients of a dish on one hand: top-notch quality seaweed, simply blanch and dressed with nothing more than sesame oil, vinegar, and sugar  and wafers of cute-lil-tiny shrimps. The flavors are direct, effective and extremely appetising.

Braised Pig Intestine

九转粉肠  RM13.90

Meticulously handmade “nine-fold” intestine braised to perfection in a traditional sauce.

Someone always tries to daunt me by telling me :'' Oh, that's the pig's spare parts!'' , the voice in my head just shoo them off, thinking that they will be missing a lot of good food. By the way, I had no shame in devouring such traditional delicacies. The braised pig intestine has the kind of rare-tensible, springy texture which I couldn't get enough.

Stir-fried Yam

酥炒芋头  RM16.90 (S) RM24.90 (M)

A savoury-sweet traditional offering of skillfully fried yam cubes with crisp golden exterior and light fluffiness within.

The yam was cooked with faultless timing, it was first steamed, then stir-fry with the just right amount of sugar. By continuously doing the laborious tossing of the yam to allow the caramelised sugar to coat the yam, it creates a crystalline, brittlely-sweet exterior mouthfeel.

Sounds pretty straight-forward but that's not just all. The earthy, fluffy sweet lil morsel also shared their plate with onions
and spring onions. Oh how much I adore this dish and I am starting to miss it already.

Homemade Beancurd

自制滑豆腐  RM15 (S) RM22 (M)

Silky smooth egg bean curd that is made fresh daily. An ideal choice for a healthy protein-rich meal, it is stir-fried
together with mushroom, carrot and sugar snap peas.

As simple as it sounds, pretty much a very authentic Putian's dish.
Tee, a lovely family man cum avid food blogger who sat beside me incessantly apprise me , saying how delicious it was
while I was busy shovelling food into my mouth. And I just kept nodding.

Braised Bean Curd with Cabbage Soup

RM22.50 (S) RM33 (M)

Another favourite dish of mine besides the Stir-fry yam.
The bean curd is very much spongy on the inside, credits to the laborious stirring while slow frying the bean
curd to ensure an even distribution of heat and for air bubbles to be captured within.
It allows the broth to be absorbed in the bean curd.

The soup was light, milky, and had a trace peppery flavour.  I won't forget how this down-to-earth dish made me felt. Exotic seafood such as Putian's native clams, shrimps, seaweed are heavily emphasise on the menu. You wouldn't believe me when I say that all these ingredient's innate goodness are drew out  by using the most minimal seasoning and the most simple cooking method.
In this bowl of milky broth for instance, all the simple ingredients came together in a way so unexpectedly right that I had to shake my head.
It was really, really good.

Fried Homemade Bean Curd

干炸嫩豆腐  RM13.90 (S) RM20 (M)

Unlike the previous dish, this traditional homemade bean curd has a rather compact, crinkled-skin.
It was fried to crisp and you have zero idea on how much hard work is paid in making these delicate dish.
Well, you do not need to know how it is made either. All you need to do is enjoy when food is being served.
Dip it with their special garlicky, sweet, light soy sauce. Dip more. If not, drench it.

PUTIEN Sweet &Sour Pork with Lychees

莆田荔枝肉 RM19 (S) RM28 (M)

Deep fried to light golden brown, the meat is tender and moist on the inside. The lychee is a perfect complement
with its added burst of sweetness to the sauce. This delicacy is a timeless favourite done of long tradition.

Fried Heng Hwa Bee Hoon

兴化米粉

RM16.50 (S) RM24 (M) RM32 (L)

Heng Hwa Bee Hoon is made from old rice milled by hand and painstakingly dried under the sun in Putian, Fujian Province. The bee hoon is translucent, silky, fine, chewy but not brittle. The flavour of the bee hoon comes from the rich, milky stock of pork bones and old hens cooked for hours at low heat . Putien's Heng Hwa Bee Hoon is infused with 10 sumptuous ingredients, the persistence in using the best ingredients is what makes their customers coming back for more.
*another must-try item on the menu*

Deep Fried Pig’s Trotters with Salt & Pepper

椒盐猪手
RM7.90/pc (Minimum 2 pcs 最少两片)

Using only 7-inch pig’s trotter, it is deep fried to a crisp, deep brown, seasoned with salt and pepper that is
rich in flavour. Sink your teeth into the crunchy skin, where it gives way to tantalizing treat of collagen.

My appetite increased when this particular dish was being served straight out from the back kitchen.
The alluring scent and irresistible aroma rushes into my nostril, my mouth began to waters.
Disposable gloves is served when you order this.
All is well as you crunch through the fried skin. I love it as it was not too oily.

It was so rich in collagen and I certainly had a kind of inexplicable pleasure devouring this. The salt and pepper spice mix in fact, enhanced the overall flavour too.
For a moment, I felt like heaven on earth, to exaggerate a little. Absolutely a fanta-bulous dish.
*Highly recommended*

Putien Mee Sua

妈祖面线

RM16.50 (S) RM24 (M) RM32 (L)

Mee Sua, or literally, “Long Noodles”, symbolizes longevity. PUTIEN Mee Sua is handmade using traditional methods
and a recipe unique to Putian. Using premium quality flour, the pristine, white, thread-thin vermicelli doesn’t turn
 soggy when cooked.

The sun-dried pristine rice vermicelli is cooked in superior pork broth and dotted with prawns, scallops,
clams and bean curd. Putien Mee Sua, the simply the essence of the best of Putian's Blessing.

Putien definitely pulls it off with an originality that is dazzling and always worth visiting.
In Putien, you will truly find an expressive cooking that explore shades of simplicity.
Though it is just the very first time I visit Putien, I didn't find a dish that disappoint and I will have this impression lasted.
