Weekdays Breakie - What a college student eats.

''Breakfast is the most important meal of the day'', I always come across this statement.
It just happened yesterday where my lecturer taught us why our brain needs food in the morning (or some sort of related topics ), she summed up with the phrase : ''People who doesn't eat breakfast is comparatively 'stupid' than those who don't missed breakfast''.  I couldn't be more agree than this statement.



I have been MIA for quite some time, hush, I know you know what I'm going to rant about. . . Well, nope, not going to complain about how busy or hectic I am ( well , at least not today, this moment, this particular post).
Back to the topic, as a college student,I have to force myself to learn how to manage my tight schedule , besides studying, revising, assignments, social life , keeping up my relationships with people , I must also spend some time for myself too. I know I need to be independent ,I need to take up the responsibility to take care of myself, not letting my parents to worry about me.

I’m always a little shocked when people tell me they don’t eat breakfast.
“I’m not hungry first thing in the morning,” they say, looking taxed at the mere thought of having to ingest something before lunch.
“Not… hungry?” I ask, unable to contain my disbelief that anyone could be so dismissive about such a crucial — nay integral — part of the day.

To me breakfast has never been an optional meal. It’s what propels me out of bed in the morning when all I want to do is hit the snooze button, burrow under my comforter and pretend that I don’t have anywhere I need to be or anything I need to do. I smile when I remember that there is a light at the end of that early morning tunnel — a cup of strong coffee and something substantial to nibble. It gives me the strength to pull myself out from my tangled web of sheets to hit the gym (or on a particularly lazy day, to stumble in the direction of the shower).

Breakfast is sacred to me. It’s a time of reflection, rejuvenation and replenishment for my soul and body, and I take the meal as seriously — if not more seriously — as I do lunch or dinner.
Especially when it involves a cup of coffee paired with a homemade English muffin with thick peanut butter, topped with Banana!
It doesn't matter what carb are you eating, as long as it taste good to the palate.



Mom will bake me a batch of homemade Charcoal Bun once in a while, for me to bring back to the hostel. They can easily last me for a week or two. I found it very versatile, I can pair it with butter and sugar, peanut butter spread and jam (Elvis Presley),scramble egg, or as clear as the picture above!

There’s something particularly comforting about a from-scratch breakfast and a good cup of coffee in a world where boxed cereal, instant oatmeal and to-go paper cups seem to rule the roost.
 Taking the time to do something special for myself in the morning makes me feel as though I’m reclaiming part of my work day — reclaiming some of my independence as a person, rather than a mule.
The process of making breakfast isn’t as difficult as it sounds. It can easily be accomplished in a couple of minutes. It doesn't require a lot of tools or condiments or ingredients.
 Early mornings I’m still delirious from sleep deprivation because I know my coffee and my breakie are waiting for me.
My non-efforts are greatly rewarded. I smear a generously thick  tablespoon of the sticky no-sugar added peanut butter over each half of the bread (and toast it!) and take a moment to breathe as I enjoy my meal. I let the smooth coffee roll over my tongue, perking up my taste buds with its deep, full-bodied flavor. I savor the sound of my teeth sinking through the crisp toasted edges of the bread. And I lick the addictive peanut butter off my serving spoon — just because I can.
I feel better after — like I’m me again — a me that’s ready to go out there and face the day.






Sometimes when I'm in short of time, I'll make a quick breakfast.
I will just cut a rainbow color of fruits and jumble up everything into a bowl, and make it as nutritious as possible. I want to make every single calorie worth consuming - A hearty and healthy breakie can help me sustain my energy throughout the entire day.
Each time I had a nutritious breakfast, I will automatically feel good about myself; my body will thank me by casting out all the negative charge , leaving me physically energetic and mentally attentive.

I must admit that only a good , and nutrient-packed breakfast can make me feel that way.



I no longer dine outside, everyday is an adventurous day for me as I discover, and create , and learn how to compose, present each and every meal for myself.  I surf food blogs everyday , without failing( and yes, I mean it).
Pinterest, StumbleUpon, Random Food blog, health blog, online magazines... the list just goes on.
There are abundant of food blogs floating in world wide web, it is impossible for me to scrutinize each of  them in a short period of time. . . That is why we have the Bookmarks Bar!

Waking up everyday, looking forward to prepare my own breakfast has never been this delightful. 
When there's food, there'll be my playground. 









 Wholemeal toast + soft boil egg + Sauteed Shiitake Mushroom






 It might not seem appealing to you but that's how I eat my breakie!




 Mixed fruits with nuts.

What a healthy-balanced diet!
*Wide grin* Playing with food is fun!!!!

Sometimes, I will melt my own nutella... 
I will buy dark chocolate chips, pop it into the microwave for a couple of minutes, give it a little stirring , toss in some chopped nuts...




...and sandwich the rich-chocolaty butter with wholemeal bread...

 To pause before eating is not an easy task, I have to endure although my food kept beckoning me to eat'em, but because I have to take picture before consuming so that I can share with y'all ! 
Sadly, by the time when I am ready to eat , my toast had already cool down to room temperature....*pout*

Anyway, be brave, give it a big chomp on the center while it's still (not so) hot. Don't be afraid to eat like a cat, let the semi-hot dark chocolate smear your cheek, and envelop your tongue....  followed by the crunchy nuts... Trust me, this will drive you nuts too!

The reason why it takes me so long to update a post is because I need to compile my breakfast everyday. ;P
There's only 5 days a week, someday I need to crawl out of bed before sunrise because I have morning classes and hence, I skipped making breakfast. 

Bear with me, I'll commit and keep this blog alive! 
By the way, I'm thinking to work on some 'Portable breakfast' ,
what do you think? ;P

  2. I don't usually eat breakfast too cause I wake up late :P and plus I don't have kitchen for me to make breakfast also so yeah ): your breakfast looks yummy to me, so healthy!

  16. I'm one of those that have to say...I'm not hungry in the morning. haha! As a college student, I don't think I woke up in time for breakfast. It's usually lunch already. =P

  18. Don't worry much about being MIA, Eunice.

    It's always good to have different types of food for breakfast. When I was still in school, I had either a bowl of cereal with milk or 2 pieces of bread with spreadable jam/cheese and a cup of milk with cooked oats. I do have an idea: have you tried fruit smoothie for breakfast?

    Portable breakfast? Is it along the lines of tuna & egg sandwich that can be made the night before? =D

      Yeah, I thought of smoothie for breakfast too... But.. I need to buy a good and reasonable (price) blender first. I actually have a stack of recipe on hand, wondering when will I get myself a blender...hehe.
      Portable breakfast, hmm, something less common than the one u mentioned? No tuna and egg, I get bored of it already...;/

    2. You don't necessarily need a blender. Breville's Crazy Shaker works just as well, am using this one for my smoothie.

  20. wow, all these dishes look so inspiring! i'm now ashamed to say that i never eat breakfast, cos i prefer to sleep in and wake up just in time to rush to work! but i'd definitely love to have a bite of the peanut-butter-banana sandwich :D

  24. Although breakfast is important, I can understand why some people don't feel like eating in the morning. This is usually due to the 3 cycles in our body. The elimination cycle is between 4am - 12pm, where the body tries to get rid of wastes. So this is actually not a good time to go heavy on meals. So the advice to eat breakfast like a king may be controversial : )

    However, eating fruits during breakfast is good as it's easiest to digest and will not burden the elimination cycle too much, compared to say, meat. But of course, this is just one theory LOL : )

    Your breakfast looks so delicious!! By the way, I only eat fruits for breakfast, but sometimes I still like toasts, half boiled eggs, and coffee!! : )
