174 - Banana Chocolate Chips Muffins.

MUFFY~!

Holiday holiday holiday,
 I wish I could shop all day, everyday, Monday , Tuesday, Wednesday,Thursday...
arghh!
There are a lot of factors which successfully cease my thoughts of going out..
Weather, people, cars, journey... >< 
and most importantly.....


Hahahah~ Just kidding...

So, after a long break for not touching all my baking tools, I decided to sayang (love) them back.
I always know that cooking/baking for others is a labour of love, don't chiu think so?
To keep on improving my skill, I ought to bake bake bake bake , everyday, so that one day I can be like Nigella Lawson, NO. Not her size, but her accomplishment, as she is a well-known-chef- in AFC channel .only. 


Ouh sorry, you can see different muffin cups I'm using, because I have ran out of stock. ;)
Anyway, I stole my mom's tarts' paper cups... *shuuuuu, don't let her know* *winks*
She's out to buy something while I was baking. ^^

Hohoho~ It seems like these muffins are lining up , saying : ''Ahh, Eunice , eat me , eat me! ^^''

Eunice : Hmm, this muffin, the texture is so.. cushiony, delicate,  soft, and *find the dictionary*, heavenly.
The each mouthful are loaded with banana flavour , ohh, and the semi-melted-chocolate chips , you know what's the ''flying high'' feelings?



Recipe : Please forgive me. I really , seriously simply (hantam) only. 

But I do have a guide .

Ingredients :

3 or 4 ripe bananas, mashed
1/3 melted butter ( I use Canola Oil)
1/2 cups sugar
2 eggs beaten
1 tbsp coffee
1 tbsp baking soda
pinch of salt ( i excluded  )
1 1/2 cup flour ( I just poured all the rest of the flour in my tub ) cause it's too little to measure.  
1 cup chocolate chips. Leave some to sprinkle on top as a decoration.

I did this because I want it simple, fast and delicious. This recipe doesn't require to use a mixer.
1) Preheat oven 180 Degree Celsius. With a woodenn spoon, mix oil into mashed bananas in a large mixing bowl.
2)Mix in the sugar , egg, coffee.
3)Sprinkle the baking soda over the mixture. Mix it.
4)Add flour, mix mix mix mix. Until it's incorporated. Fold in chocolate chips.
5) Scoop into a prepared muffin tin, reduce the temperature of oven to 160 Degree, and bake of 25-30 minutes.
6) You can assure that it's done when a toothpic inserted into the center of  muffins and comes out clean. Cool it on a rack , and bite it. ;)
